(And What to Do With It)

There’s always something different at the market, and that’s the whole point.
When veg is fresh, it changes week to week; depending on what’s come in, what’s looking its best, and what we’d actually take home ourselves.
Here’s what stood out this week, and a few easy ways to make the most of it.
What’s Looking Good Right Now
This week, we’ve been picking up:
Carrots
Kale
Leeks
Potatoes
Cabbage
Fresh herbs
All of it brought in fresh, nothing sitting about. Nothing carried over.
Simple Ways to Use It
You don’t need complicated recipes when the veg is this fresh.
Here are a few easy ideas:
1. Quick Roasted Veg Tray
Chop your carrots, potatoes, and cabbage.
A bit of oil, salt, and into the oven.
That’s it.
Roasting brings out the sweetness — especially when the veg hasn’t been sitting around for days.
2. Leek & Potato Soup
A proper classic for a reason. Leeks, potatoes, stock and simmer it down and blend. When the ingredients are fresh, you don’t need much else.
3. Simple Garlic Kale
Quick fry, bit of garlic, pinch of salt. Done in minutes, and works with just about anything.
Why fresh today matters
You’ll notice it straight away when you cook. Veg that’s been sitting in storage loses its bite, its flavour, and a bit of its life.
But when it’s bought and delivered the same day, it holds onto all of that.
It cooks better.
It tastes better.
And it lasts longer in your kitchen too.
A Wee Tip
If you’re not using everything at once:
Keep herbs in a bit of water (like flowers)
Store leafy veg in the fridge, loosely wrapped
Root veg (like potatoes and carrots) are best kept cool and dry
Simple things, but they make a difference.
